- Step 1: In a large saucepan, heat the olive oil over medium heat. Once hot, add the finely chopped onion. Sauté for about 5 minutes, stirring occasionally, until the onion becomes translucent and fragrant.
- Step 2: Stir in the minced garlic and sliced wild mushrooms. Cook for about 6-8 minutes, or until the mushrooms are tender and have released their moisture, turning golden brown.
- Step 3: Sprinkle in the fresh thyme leaves, mixing them in for a minute. Then add the orzo pasta, stirring to combine all the ingredients thoroughly.
- Step 4: Carefully pour in the vegetable broth, stirring to incorporate all the ingredients. Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to cook uncovered for about 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.
- Step 5: Remove the saucepan from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste, adjusting according to your preference.
