- Step 1: Cook the pasta in a large pot of salted water according to the package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
- Step 2: Drain the pasta using a colander and rinse it under cold water to stop the cooking process.
- Step 3: In a large mixing bowl, combine the cooled rotini pasta, black beans, corn, cherry tomatoes, shredded cheddar cheese, and shredded lettuce. Mix until evenly distributed.
- Step 4: Sprinkle the taco seasoning over the mixture and pour in the ranch dressing. Use a large mixing spoon to gently toss everything together until well coated.
- Step 5: Gently fold in the crushed Doritos, saving some for garnish if desired.
- Step 6: (Optional) Let the salad chill in the refrigerator for about 30 minutes before serving to allow the flavors to meld.
- Step 7: Garnish with additional crushed Doritos and sliced green onions before serving.
Notes
You can make it healthier by using whole grain pasta, low-fat ranch dressing, and increasing the amount of fresh vegetables. Store leftovers in the fridge for up to 2 days, adding the Doritos right before serving.
