  • 8 oz rotini pasta
  • 1 can black beans 15 ounces, rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup cherry tomatoes halved
  • 1 cup cheddar cheese shredded
  • 1 cup lettuce shredded
  • 1 packet taco seasoning
  • 1 cup ranch dressing
  • 2 cups Doritos crushed

Method
 

  1. Step 1: Cook the pasta in a large pot of salted water according to the package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
  2. Step 2: Drain the pasta using a colander and rinse it under cold water to stop the cooking process.
  3. Step 3: In a large mixing bowl, combine the cooled rotini pasta, black beans, corn, cherry tomatoes, shredded cheddar cheese, and shredded lettuce. Mix until evenly distributed.
  4. Step 4: Sprinkle the taco seasoning over the mixture and pour in the ranch dressing. Use a large mixing spoon to gently toss everything together until well coated.
  5. Step 5: Gently fold in the crushed Doritos, saving some for garnish if desired.
  6. Step 6: (Optional) Let the salad chill in the refrigerator for about 30 minutes before serving to allow the flavors to meld.

Notes

You can make it healthier by using whole grain pasta, low-fat ranch dressing, and increasing the amount of fresh vegetables. Store leftovers in the fridge for up to 2 days, adding the Doritos right before serving.
