Ingredients

For the Muffins
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground cloves
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.5 cup molasses
  • 2 large eggs
  • 0.5 cup buttermilk
For the Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 0.5 tsp vanilla extract

Equipment

  • Muffin Tin
  • Mixing bowls
  • Whisk
  • Rubber spatula or wooden spoon
  • Cooling rack
  • Small bowl for glaze

Method

  1. Step 1: Preheat the oven to 350°F (175°C). Prepare muffin tin by lining with paper liners or greasing with cooking spray.
  2. Step 2: In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt. Set aside.
  3. Step 3: In a large bowl, beat softened butter and brown sugar until light and fluffy, about 3-5 minutes.
  4. Step 4: Add molasses and mix until well combined.
  5. Step 5: Add eggs one at a time, mixing well after each addition. Gradually stir in buttermilk until smooth.
  6. Step 6: Slowly incorporate the dry mixture into the wet ingredients, stirring until just combined.
  7. Step 7: Divide the batter evenly among muffin cups, filling each about two-thirds full.
  8. Step 8: Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
  9. Step 9: For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth.
  10. Step 10: Drizzle the glaze over cooled muffins and let set before serving.

Notes

These muffins freeze well, so you can make a big batch and save some for later. Just reheat them for a quick treat!
