  • 0.25 cup Fresh Parsley chopped
  • 0.25 cup Fresh Dill chopped

  • 0.25 cup Red Wine Vinegar
  • 2 tablespoons Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper freshly ground

Method
 

Instructions
  1. In a large bowl, combine the sliced cucumbers, chopped tomatoes, red onion (if using), parsley, and dill.
  2. In a small bowl, whisk together the red wine vinegar, olive oil, salt, and pepper.
  3. Pour the dressing over the cucumber and tomato mixture.
  4. Gently toss to coat all the vegetables evenly in the dressing.
  5. Taste and adjust seasonings as needed, adding more salt, pepper, or vinegar to your preference.
  6. Let the salad sit for at least 15 minutes to allow the flavors to meld. This step is optional but recommended.
  7. Serve chilled or at room temperature. Garnish with extra herbs if desired.

Notes

For a creamier dressing, add a tablespoon of Greek yogurt or mayonnaise. Feel free to experiment with other herbs like mint or chives. This salad is best served fresh, but leftovers can be stored in the refrigerator for up to 2 days.
