Method
 

  1. Step 1: In a large mixing bowl, combine dark rum, brown sugar, vanilla extract, and ground cinnamon. Stir until the sugar dissolves. Add pineapple rings, ensuring they are well-coated. Cover and refrigerate for at least 1 hour.
  2. Step 2: In another bowl, whisk together all-purpose flour, cornstarch, granulated sugar, baking powder, and salt to prepare the dry mixture.
  3. Step 3: Heat coconut oil in a deep skillet or frying pan over medium heat until it reaches about 350°F (175°C).
  4. Step 4: Remove soaked pineapple rings, letting excess liquid drip off. Dredge each ring in the dry flour mixture until evenly coated.
  5. Step 5: Carefully place the coated pineapple rings into the hot oil. Fry for 2-3 minutes per side until golden brown. Use a slotted spoon to turn them gently.
