For the Orzo Bake
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup roasted red peppers chopped
  • 1 cup goat cheese crumbled
  • 1 cup spinach chopped
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil, for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of orzo pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  3. Step 3: In a large mixing bowl, combine the cooked orzo with roasted red peppers, goat cheese, chopped spinach, grated Parmesan cheese, minced garlic, dried oregano, red pepper flakes, salt, pepper, and olive oil. Mix well.
  4. Step 4: Grease your baking dish with olive oil. Transfer the orzo mixture into the dish, spreading it out evenly.
  5. Step 5: Bake for 20-25 minutes until the top is golden and the cheese is bubbly.
  6. Step 6: Let cool for a few minutes. Garnish with fresh basil if desired, then serve warm.

Notes

This dish can be prepared ahead of time and stored in the refrigerator before baking. It also freezes well for up to 3 months.
