For the Rib Roast
  • 1 5-7 lb rib roast, bone-in
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
For the Creamy Horseradish Sauce
  • 1 cup sour cream
  • 2 tbsp prepared horseradish
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice

Method
 

  1. Step 1: Preheat your oven to 450°F (230°C).
  2. Step 2: In a small bowl, combine minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper to form a paste.
  3. Step 3: Rub the herb and garlic mixture all over the rib roast.
  4. Step 4: Place the rib roast on a roasting rack in a roasting pan, bone side down.
  5. Step 5: Roast the rib roast in the preheated oven for 20 minutes.
  6. Step 6: After 20 minutes, reduce the oven temperature to 325°F (165°C) and continue roasting for 1.5 to 2 hours.
  7. Step 7: Use a meat thermometer to check the internal temperature of the roast.
  8. Step 8: Let the roast rest for 20-30 minutes after removing it from the oven.
  9. Step 9: Prepare the horseradish sauce by mixing sour cream, prepared horseradish, Dijon mustard, lemon juice, salt, and pepper.
  10. Step 10: Slice the rib roast against the grain and serve with the creamy horseradish sauce.
