Method
 

  1. Step 1: In a medium saucepan, combine the chopped rhubarb, water, and sugar. Bring this mixture to a boil over medium heat, stirring occasionally to ensure the sugar dissolves completely.
  2. Step 2: Once boiling, reduce the heat to low and allow the mixture to simmer for about 10-15 minutes. During this time, the rhubarb will soften and release its juices, creating a syrup.
  3. Step 3: After simmering, remove the saucepan from the heat and let it cool. This will enhance the flavors and make it easier to handle.
  4. Step 4: Using a fine mesh sieve, strain the rhubarb mixture into a bowl or pitcher. Press down on the solids to extract as much liquid as possible. Discard the leftover rhubarb pulp.
  5. Step 5: Stir in the rosewater and the freshly squeezed lemon juice into the strained rhubarb syrup. This will add a floral note and a zesty kick to your mocktail.
  6. Step 6: To serve, fill a glass with ice cubes. Pour in the rhubarb mixture until the glass is halfway full. Top it off with sparkling water to add a bubbly finish.

Notes

For a sweeter drink, you can adjust the amount of sugar to your liking. Start with less sugar and add more if needed.
