- Step 1: Preheat the Oven: Start by preheating your oven to 350°F (175°C).
- Step 2: Prepare the Baking Dish: Grease a 9x13-inch baking dish with butter or non-stick spray.
- Step 3: Make the Crust: In a mixing bowl, combine the flour, sugar, softened butter, egg, vanilla extract, and salt. Use a fork or your hands to mix until a dough forms.
- Step 4: Press the Dough: Transfer the dough to the prepared baking dish and press it evenly across the bottom.
- Step 5: Bake the Crust: Place the crust in the preheated oven and bake for 15 minutes.
- Step 6: Prepare the Rhubarb Filling: While the crust is baking, chop the rhubarb into small pieces.
- Step 7: Make the Custard Mixture: In another mixing bowl, whisk together the eggs, vanilla extract, and heavy cream until well combined.
- Step 8: Combine the Mixtures: Gently fold the rhubarb mixture into the egg mixture.
