  • 1 cup Rice Chex cereal
  • 0.5 cup Powdered sugar, for coating plus extra if needed
  • 1 teaspoon Vanilla extract Optional, enhances flavor

Method

  1. Melt chocolate: Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Alternatively, use a double boiler.
  2. Combine wet ingredients: In a separate bowl, whisk together melted chocolate, peanut butter, powdered sugar, milk, and vanilla extract (if using) until completely smooth.
  3. Add cereal: Gently fold in the Chex cereal until each piece is evenly coated with the chocolate mixture.
  4. Chill: Spread the mixture onto a parchment-lined baking sheet. Refrigerate for at least 30 minutes, or until firm.
  5. Roll into balls: Once firm, roll the chilled mixture into 1-inch balls.
  6. Coat in powdered sugar: Place powdered sugar in a shallow dish. Roll each truffle ball in the powdered sugar to coat completely. Add more sugar as needed.
  7. Serve and enjoy! Serve immediately or store in an airtight container in the refrigerator for up to a week.

Notes

For extra flavor, try adding a pinch of salt to the chocolate mixture. You can also substitute other cereals like Corn Chex or even crushed pretzels for a different texture.
