Ingredients

For the Pretzel Crust
  • 2 cups crushed pretzels
  • 1 cup unsalted butter melted
  • 1 cup brown sugar packed
For the Peanut Butter Layer
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
For the Chocolate Topping
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp vegetable oil

Equipment

  • 9x13 inch baking pan
  • Parchment paper
  • Mixing bowls
  • Spatula
  • Small saucepan
  • Refrigerator
  • Knife

Method

  1. Step 1: Preheat the oven to 350°F (175°C). This ensures that your bars bake evenly. While the oven heats, prepare your baking pan.
  2. Step 2: Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
  3. Step 3: In a large bowl, combine 2 cups of crushed pretzels with 1 cup of melted unsalted butter. Mix well until the pretzels are fully coated and the mixture holds together when pressed. Press this mixture firmly into the bottom of the prepared baking pan.
  4. Step 4: In another bowl, mix together 1 cup of packed brown sugar, 1 cup of creamy peanut butter, and 2 cups of powdered sugar until smooth. Spread the peanut butter mixture evenly over the pretzel crust in the baking pan.
  5. Step 5: In a small saucepan over low heat, melt 1 cup of semi-sweet chocolate chips with 2 tablespoons of vegetable oil. Stir until the mixture is smooth and glossy.
  6. Step 6: Pour the melted chocolate over the peanut butter layer in the baking pan, spreading it evenly with a spatula.
  7. Step 7: Refrigerate the bars for at least 2 hours or until the chocolate is firm to the touch.
  8. Step 8: Once set, lift the bars out of the pan using the parchment paper overhang. Place on a cutting board and cut into squares.

Notes

These bars keep well in the fridge, making them great for meal prep or a quick grab-and-go snack.
