  • 1 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 0.5 teaspoon Chili Powder
  • 1 teaspoon Lime Zest
  • 0.5 teaspoon Lime Juice
  • 0.25 teaspoon Garlic Powder

Method
 

Instructions
  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Rinse pumpkin seeds under cold water and pat completely dry with paper towels.
  3. In a bowl, toss pumpkin seeds with olive oil, salt, pepper, chili powder, lime zest, lime juice, and garlic powder. Ensure even coating.
  4. Spread seeds in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Roast for 20-25 minutes, stirring halfway through, until golden brown and crispy. Watch closely towards the end to prevent burning.
  6. Remove from oven and let cool completely on the baking sheet to crisp further.
  7. Store in an airtight container at room temperature for up to a week.

Notes

For a less spicy version, reduce the chili powder. Experiment with other seasonings like cumin or smoked paprika!
