- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Rinse pumpkin seeds under cold water and pat completely dry with paper towels.
- In a bowl, toss pumpkin seeds with olive oil, salt, pepper, chili powder, lime zest, lime juice, and garlic powder. Ensure even coating.
- Spread seeds in a single layer on the prepared baking sheet. Avoid overcrowding.
- Roast for 20-25 minutes, stirring halfway through, until golden brown and crispy. Watch closely towards the end to prevent burning.
- Remove from oven and let cool completely on the baking sheet to crisp further.
- Store in an airtight container at room temperature for up to a week.
Notes
For a less spicy version, reduce the chili powder. Experiment with other seasonings like cumin or smoked paprika!
