- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease and flour a 9x5-inch loaf pan.
- Step 3: In a large mixing bowl, combine the grated zucchini, packed brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract. Mix well until all ingredients are fully combined.
- Step 4: In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Step 6: If desired, fold in the chopped nuts and/or chocolate chips.
- Step 7: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Step 8: Bake in your preheated oven for 50-60 minutes. Check for doneness using a toothpick.
- Step 9: Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
This bread can be stored in an airtight container for several days, or you can freeze it for longer storage.
