- Make the crust: Whisk together flour and salt. Cut in cold butter until crumbly. Gradually add ice water, mixing until dough forms. Form into a disc, wrap, and refrigerate for at least 30 minutes.
- Make the filling: Combine sliced apples, sugars, flour, cinnamon, nutmeg, allspice, and lemon juice. Toss gently.
- Preheat oven to 375°F (190°C).
- Roll out dough to ⅛ inch thickness. Cut out 4-inch circles and press into mini muffin tins.
- Fill each crust with apple filling. Dot with small pieces of butter.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Cool in muffin tin for a few minutes before transferring to a wire rack to cool completely.
- Serve warm or at room temperature.
Notes
For a richer flavor, use a combination of apple varieties. You can also brush the tops of the pies with an egg wash before baking for a glossy finish. Store leftover pies in an airtight container at room temperature for up to 3 days.
