For the Muffins
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 1 large egg
  • 0.5 cup molasses
  • 0.5 cup buttermilk
  • 1 tsp vanilla extract
For the Maple Glaze
  • 1 cup powdered sugar
  • 2 tbsp maple syrup
  • 1-2 tbsp milk as needed for consistency

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Line a muffin tin with paper liners or grease the cups.
  3. Step 3: In a medium bowl, combine the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and salt. Whisk until well mixed.
  4. Step 4: In a large bowl, beat the softened unsalted butter and brown sugar together until light and fluffy.
  5. Step 5: Add the large egg and mix until fully incorporated. Then add the molasses, buttermilk, and vanilla extract, stirring until well combined.
  6. Step 6: Gradually add the dry ingredient mixture into the wet ingredients, using a spatula to mix until just combined.
  7. Step 7: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Step 8: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  10. Step 10: For the maple glaze, whisk together the powdered sugar, maple syrup, and enough milk to achieve desired consistency.
