- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to the package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Step 3: In a large mixing bowl, combine ricotta cheese, grated Parmesan cheese, lemon zest, lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper. Mix well until creamy and aromatic.
- Step 4: Gently fold the cooked orzo into the cheese mixture until well combined.
- Step 5: Pour the mixture into a greased baking dish and spread it out evenly.
- Step 6: Bake for 25-30 minutes until golden and bubbly.
- Step 7: Let cool slightly and garnish with fresh herbs before serving.
Notes
This dish can be made in advance and stored in the refrigerator. It can also be frozen for up to 3 months.
