- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine the drained whole kernel corn, creamed corn, milk, and eggs. Mix well.
- Add the Jiffy corn muffin mix and stir until just combined. Do not overmix.
- Stir in the shredded cheddar cheese (if using) and melted butter.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the batter. You can also substitute other types of cheese for the cheddar, such as Monterey Jack or pepper jack.
