  • 1 15 ounce can Whole Kernel Corn drained
  • 1 15 ounce can Creamed Corn
  • 1 cup Milk
  • 2 Eggs lightly beaten
  • 1 8 ounce package Jiffy Corn Muffin Mix
  • 1 1/2 cup Shredded Cheddar Cheese optional
  • 1 1/4 cup Melted Butter

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the drained whole kernel corn, creamed corn, milk, and eggs. Mix well.
  3. Add the Jiffy corn muffin mix and stir until just combined. Do not overmix.
  4. Stir in the shredded cheddar cheese (if using) and melted butter.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Let cool slightly before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the batter. You can also substitute other types of cheese for the cheddar, such as Monterey Jack or pepper jack.
