  • 8 oz pasta your choice, such as fusilli or penne
  • 1/4 cup olive oil
  • 1/4 cup hot honey
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers diced (red, yellow, or green)
  • 1/2 cup red onion thinly sliced
  • 1 cup corn (fresh or canned)
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh basil chopped
  • Salt and pepper

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add your choice of pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  2. Step 2: In a large mixing bowl, combine 1/4 cup of olive oil and 1/4 cup of hot honey. Whisk until well incorporated.
  3. Step 3: Chop your vegetables: halve the cherry tomatoes, dice the bell peppers, and thinly slice the red onion. If using fresh corn, cut the kernels off the cob.
  4. Step 4: Let the cooked pasta cool slightly before adding it to the dressing. Add the pasta, chopped cherry tomatoes, bell peppers, red onion, and corn to the bowl with the dressing.
  5. Step 5: Crumble the feta cheese over the salad and sprinkle in the chopped fresh basil. Toss everything together using tongs or a large spoon until well coated.
  6. Step 6: Taste the salad and season with salt and pepper as needed. Serve warm or let it chill in the fridge to meld the flavors.

Notes

This salad holds up well for meal prep and can be stored in the refrigerator for up to three days. Consider keeping the dressing separate until serving to maintain texture.
