- Step 1: In a large mixing bowl, add 1 cup of creamy peanut butter, 1/2 cup of maple syrup, and 1 teaspoon of vanilla extract. Mix these ingredients together until you achieve a smooth consistency.
- Step 2: Gradually incorporate 1/2 cup of unsweetened cocoa powder into the peanut butter mixture. Stir well until the cocoa is fully blended in.
- Step 3: Next, add 2 cups of rolled oats and 1 cup of finely chopped honey-roasted peanuts to the bowl. Use the spatula to fold the ingredients together gently.
- Step 4: Line your baking dish with parchment paper, leaving some overhang for easy removal later. Press the mixture firmly into the bottom of the dish.
- Step 5: In a microwave-safe bowl or using a double boiler, melt 1/2 cup of chocolate chips until smooth. Drizzle the chocolate over the pressed mixture.
- Step 6: Place the baking dish in the refrigerator and let it chill for at least 2 hours, or until the mixture is firm and set.
- Step 7: After chilling, remove the bars from the dish using the parchment overhang. Cut into squares or rectangles and serve.
Notes
These bars can be stored in an airtight container in the refrigerator for up to a week, or frozen for longer storage.
