  • 1 pound Pasta Fettuccine or bucatini recommended
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic minced
  • 1/2 teaspoon Red Pepper Flakes optional
  • 1 28-ounce can Crushed Tomatoes
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black Pepper freshly ground, or to taste
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup Fresh Basil chopped, for garnish (optional)

Method
 

Instructions
  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes (if using) to the skillet and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic.
  4. Pour in the crushed tomatoes, salt, and pepper. Bring to a simmer and cook for about 10 minutes, stirring occasionally.
  5. Add the cooked pasta to the skillet and toss to coat with the sauce. Add a little pasta water if needed to loosen the sauce.
  6. Stir in the Parmesan cheese until melted and creamy.
  7. Serve immediately, garnished with fresh basil leaves (if using).

Notes

For a richer flavor, use high-quality olive oil and Parmesan cheese. Feel free to add other vegetables like spinach or mushrooms to the sauce. A pinch of sugar can help balance the acidity of the tomatoes if desired.
