  • 3 Ripe Peaches peeled and diced
  • 0.5 Red Onion finely chopped
  • 1 Jalapeño Pepper seeded and minced (optional)
  • 0.5 cup Cilantro chopped
  • 0.25 cup Lime Juice
  • 2 tablespoons Honey or agave nectar (adjust to taste)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Method
 

Instructions
  1. Peel and dice the peaches. Finely chop the red onion and mince the jalapeño (if using). Chop the cilantro.
  2. In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), and cilantro.
  3. In a small bowl, whisk together the lime juice, honey (or agave), salt, and pepper.
  4. Pour the lime juice mixture over the peach mixture and stir gently to combine.
  5. Taste and adjust seasonings as needed. Add more lime juice for tartness or more honey for sweetness.
  6. Let the salsa sit for at least 15 minutes to allow the flavors to meld. (Optional, but recommended).
  7. Serve immediately with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.

Notes

For a milder salsa, remove more seeds from the jalapeño or omit it entirely. You can also add other ingredients like diced mango or bell pepper for extra flavor and color.
