- Peel and dice the peaches. Finely chop the red onion and mince the jalapeño (if using). Chop the cilantro.
- In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), and cilantro.
- In a small bowl, whisk together the lime juice, honey (or agave), salt, and pepper.
- Pour the lime juice mixture over the peach mixture and stir gently to combine.
- Taste and adjust seasonings as needed. Add more lime juice for tartness or more honey for sweetness.
- Let the salsa sit for at least 15 minutes to allow the flavors to meld. (Optional, but recommended).
- Serve immediately with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.
Notes
For a milder salsa, remove more seeds from the jalapeño or omit it entirely. You can also add other ingredients like diced mango or bell pepper for extra flavor and color.
