  • 12 oz fresh tortellini cheese or your choice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup mozzarella balls halved
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Add the fresh tortellini and cook according to the package instructions, usually around 3-5 minutes. Once cooked, drain the tortellini in a colander and rinse it under cold water to stop the cooking process.
  2. Step 2: While the tortellini is cooking, chop your vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Slice the black olives and halve the mozzarella balls.
  3. Step 3: In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, diced cucumber, chopped red onion, sliced black olives, halved mozzarella balls, and chopped basil. Gently toss the ingredients together.
  4. Step 4: In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  5. Step 5: Pour the dressing over the tortellini salad and toss gently to ensure everything is evenly coated.
