- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease and flour a 9x5-inch loaf pan.
- Step 3: In a medium bowl, combine grated zucchini with flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk well and set aside.
- Step 4: In a large bowl, whisk together vegetable oil, granulated sugar, eggs, and vanilla extract until smooth.
- Step 5: Gradually add dry ingredient mixture to wet ingredients. Mix gently until just combined.
- Step 6: If using, fold in walnuts or pecans gently.
- Step 7: Pour the batter into the prepared loaf pan, spreading it evenly.
- Step 8: Bake for 50-60 minutes. Check for doneness with a toothpick.
- Step 9: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
