  • 1 bag Doritos Choose your favorite flavor
  • 1 lb ground beef or turkey For a leaner option, turkey works wonderfully

  • 1 cup cherry tomatoes Halved for sweetness and color

  • 1 cup corn Canned or frozen; adds sweetness and texture

Method
 

  1. Step 1: In a large skillet over medium heat, add your ground beef or turkey. Use a spatula to break it apart as it cooks. Cook until the meat is fully browned, about 7-10 minutes. Be sure to drain any excess fat.
  2. Step 2: Once your meat is cooked, sprinkle the taco seasoning over it. Follow the package instructions, typically adding about 2/3 cup of water and letting it simmer for a few minutes until thickened.
  3. Step 3: While the meat is cooking, prepare your vegetables. Rinse and shred the lettuce, halve the cherry tomatoes, dice the bell peppers, and drain and rinse the black beans.
  4. Step 4: In a large mixing bowl, combine the shredded lettuce, cherry tomatoes, shredded cheese, black beans, corn, and diced bell peppers. Mix them gently to combine.
  5. Step 5: After the meat has cooled slightly, add it to the vegetable mixture.
  6. Step 6: Just before serving, crush the Doritos over the salad. This keeps them crunchy.
  7. Step 7: Drizzle salsa over the top and add sour cream if desired. Toss gently to combine.
  8. Step 8: If using fresh cilantro, sprinkle it over the top as a garnish. Serve the salad immediately.
