- Step 1: Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- Step 2: In a large mixing bowl, combine grated zucchini, granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
- Step 3: In a medium mixing bowl, whisk together all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
- Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 5: Gently fold in the chocolate chips.
- Step 6: Pour the batter into the prepared loaf pan and spread it evenly.
- Step 7: Bake for 50-60 minutes or until a toothpick comes out clean.
- Step 8: Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Make sure to squeeze out excess moisture from the grated zucchini before mixing. You can also add nuts or use dark chocolate chips for variation.
