- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a large pot, bring salted water to a boil. Once boiling, add the baby carrots and cook them for about 10 minutes or until they are tender but firm.
- Step 3: Once the carrots are cooked, drain them in a colander and let them cool for a few minutes.
- Step 4: On a baking sheet lined with parchment paper, place the carrots in a single layer. Using a fork or the bottom of a glass, gently smash each carrot until it’s flattened but still intact.
- Step 5: Drizzle the olive oil over the smashed carrots. Sprinkle them with salt, black pepper, garlic powder, and paprika. Use a spatula to toss the carrots gently, ensuring they are evenly coated with the seasonings.
- Step 6: Place the baking sheet in the preheated oven and bake for 20-25 minutes until they are golden and crispy.
- Step 7: Once baked, remove the carrots from the oven and garnish with fresh herbs if desired. Serve immediately while they’re warm and crispy!
Notes
These bites are best enjoyed fresh, but they can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispiness.
