  • 16 ounces Extra Sharp Cheddar Cheese shredded
  • 8 ounces Cream Cheese softened
  • 4 ounces Pimentos drained and chopped
  • 0.25 cup Mayonnaise
  • 2 tablespoons Buttermilk (or milk)
  • 1 teaspoon Yellow Mustard
  • 1 teaspoon Garlic Powder
  • 0.25 teaspoon Onion Powder
  • 0.25 teaspoon Cayenne Pepper optional
  • to taste Salt and Freshly Ground Black Pepper

Equipment

  • Mixing bowl

Method

Instructions
  1. In a medium bowl, combine the shredded cheddar cheese and softened cream cheese. Mix well until evenly combined.
  2. Add the drained and chopped pimentos, mayonnaise, buttermilk (or milk), yellow mustard, garlic powder, onion powder, and cayenne pepper (if using).
  3. Gently mix all ingredients together until thoroughly combined and creamy. Avoid overmixing, as this can make the pimento cheese too thin.
  4. Season with salt and freshly ground black pepper to taste. Start with a small amount and add more as needed. Taste and adjust seasonings as desired.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional but recommended for the best flavor.
  6. Serve chilled with crackers, bread, vegetables, or as a sandwich spread. Enjoy!

Notes

For a smoother pimento cheese, you can briefly pulse the mixture in a food processor. Consider adding a pinch of paprika for extra color and flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
