  • 8 ounces Rotini pasta
  • 1 large Cucumber peeled, seeded, and diced
  • 1/2 cup Red onion thinly sliced
  • 1/2 cup Mayonnaise
  • 1/4 cup Plain Greek yogurt
  • 2 tablespoons White wine vinegar
  • 1 tablespoon Fresh dill chopped
  • 1 tablespoon Fresh parsley chopped
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta cooks, combine diced cucumber and red onion in a large bowl.
  3. In a separate bowl, whisk together mayonnaise, Greek yogurt, vinegar, dill, parsley, Dijon mustard, salt, and pepper until smooth.
  4. Add the cooled pasta to the bowl with cucumber and red onion.
  5. Pour dressing over pasta and vegetables; toss gently to combine.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Serve chilled. Garnish with extra dill or parsley, if desired.

Notes

For a richer flavor, use a combination of mayonnaise and sour cream instead of just mayonnaise. You can also add other vegetables such as bell peppers or cherry tomatoes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
