- Cook macaroni according to package directions until al dente. Drain well and set aside.
- In the crock-pot, melt butter over low heat. Whisk in flour until smooth.
- Gradually whisk in milk until smooth and thickened. Stir in salt and pepper.
- Add cheddar, Monterey Jack (if using), and Parmesan (if using) to the sauce. Stir until melted and creamy.
- Add cooked macaroni to the cheese sauce, stirring gently to combine.
- Cook on low for 2-3 hours, or until heated through and bubbly, stirring occasionally to prevent sticking. Add a little more milk if the sauce becomes too thick.
- Serve immediately. Garnish with extra cheese, bread crumbs, or bacon bits (optional).
Notes
For a richer flavor, use a combination of sharp and mild cheddar cheese. You can also add cooked vegetables like broccoli or peas for added nutrition.
