  • 1 pound Elbow Macaroni
  • 1/2 cup Butter Unsalted
  • 1/2 cup All-Purpose Flour
  • 3 cups Milk Whole milk recommended for creaminess
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper Freshly ground is best
  • 4 cups Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese Optional
  • 1/2 cup Shredded Parmesan Cheese Optional

Method
 

Instructions
  1. Cook macaroni according to package directions until al dente. Drain well and set aside.
  2. In the crock-pot, melt butter over low heat. Whisk in flour until smooth.
  3. Gradually whisk in milk until smooth and thickened. Stir in salt and pepper.
  4. Add cheddar, Monterey Jack (if using), and Parmesan (if using) to the sauce. Stir until melted and creamy.
  5. Add cooked macaroni to the cheese sauce, stirring gently to combine.
  6. Cook on low for 2-3 hours, or until heated through and bubbly, stirring occasionally to prevent sticking. Add a little more milk if the sauce becomes too thick.
  7. Serve immediately. Garnish with extra cheese, bread crumbs, or bacon bits (optional).

Notes

For a richer flavor, use a combination of sharp and mild cheddar cheese. You can also add cooked vegetables like broccoli or peas for added nutrition.
