  • 8 oz rotini pasta or any pasta of your choice
  • 2 cups cooked chicken diced
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons for topping

Method
 

  1. Step 1: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta in a colander and rinse under cold water to cool it down quickly.
  2. Step 2: While the pasta is cooking, take your cooked chicken and dice it into bite-sized pieces. Chop your romaine lettuce and halve the cherry tomatoes.
  3. Step 3: In a large mixing bowl, combine the cooled rotini pasta, diced chicken, halved cherry tomatoes, and chopped romaine lettuce. Toss gently to mix the ingredients.
  4. Step 4: Pour the Caesar dressing over the mixed ingredients and add the grated Parmesan cheese. Toss everything together until all ingredients are evenly coated with the dressing.
  5. Step 5: Taste your salad and season with salt and pepper as needed.
  6. Step 6: Just before serving, sprinkle the croutons on top. Serve chilled or at room temperature.
