  • 1 lb Boneless, skinless chicken breasts Cut into 1-inch cubes
  • 1 tbsp Olive oil
  • 0.5 cup Onion Chopped
  • 1 Green bell pepper Chopped
  • 1 Red bell pepper Chopped
  • 2 cloves Garlic Minced
  • 1 tbsp Cajun seasoning Or more, to taste
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Heavy cream
  • 0.5 cup Chicken broth
  • 0.25 cup Parmesan cheese Grated
  • 0.25 cup Fresh parsley Chopped
  • 8 oz Pasta Penne, rotini, or your favorite shape

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in Cajun seasoning, salt, and pepper. Cook for 1 minute, stirring constantly.
  5. Pour in heavy cream and chicken broth. Bring to a simmer and cook until slightly thickened, about 2-3 minutes.
  6. Add cooked chicken and pasta to the skillet. Stir to combine.
  7. Stir in Parmesan cheese and parsley. Cook for 1 minute more, or until cheese is melted and sauce is heated through.
  8. Serve immediately. Garnish with extra parsley, if desired.

Notes

For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper. You can also add other vegetables, such as mushrooms or zucchini. Leftovers can be stored in the refrigerator for up to 3 days.
