- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in Cajun seasoning, salt, and pepper. Cook for 1 minute, stirring constantly.
- Pour in heavy cream and chicken broth. Bring to a simmer and cook until slightly thickened, about 2-3 minutes.
- Add cooked chicken and pasta to the skillet. Stir to combine.
- Stir in Parmesan cheese and parsley. Cook for 1 minute more, or until cheese is melted and sauce is heated through.
- Serve immediately. Garnish with extra parsley, if desired.
Notes
For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper. You can also add other vegetables, such as mushrooms or zucchini. Leftovers can be stored in the refrigerator for up to 3 days.
