- Beat the softened cream cheese with an electric mixer until completely smooth and creamy. This is crucial for a smooth texture.
- Gradually add the powdered sugar, mixing on low speed until just combined. Be careful not to overmix.
- Stir in the vanilla and peppermint extracts. Add a few drops of green food coloring, if desired, and mix until evenly distributed.
- Taste the mixture and add more peppermint extract if needed, to your liking.
- Roll the mixture into small balls (about 1 inch in diameter), or use a spoon to drop small mounds onto wax paper or parchment paper. If rolling, you can roll them in crushed candy canes.
- Refrigerate the mints for at least 30 minutes, or until firm.
- Serve chilled and enjoy! Store leftovers in an airtight container in the refrigerator.
Notes
For a stronger peppermint flavor, use peppermint oil instead of extract. You can also add other extracts, such as almond or orange, to customize the flavor.
