  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1/2 - 1 teaspoon Peppermint Extract to taste
  • a few drops Green Food Coloring optional
  • 1/2 cup Crushed Candy Canes optional, for rolling

Method
 

Instructions
  1. Beat the softened cream cheese with an electric mixer until completely smooth and creamy. This is crucial for a smooth texture.
  2. Gradually add the powdered sugar, mixing on low speed until just combined. Be careful not to overmix.
  3. Stir in the vanilla and peppermint extracts. Add a few drops of green food coloring, if desired, and mix until evenly distributed.
  4. Taste the mixture and add more peppermint extract if needed, to your liking.
  5. Roll the mixture into small balls (about 1 inch in diameter), or use a spoon to drop small mounds onto wax paper or parchment paper. If rolling, you can roll them in crushed candy canes.
  6. Refrigerate the mints for at least 30 minutes, or until firm.
  7. Serve chilled and enjoy! Store leftovers in an airtight container in the refrigerator.

Notes

For a stronger peppermint flavor, use peppermint oil instead of extract. You can also add other extracts, such as almond or orange, to customize the flavor.
