- Step 1: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with oil or cooking spray to prevent sticking.
- Step 2: In a medium bowl, mix together the grated zucchini, all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt. Stir until well combined and set aside.
- Step 3: In a large bowl, whisk together the vegetable oil, granulated sugar, eggs, and vanilla extract until smooth and well combined.
- Step 4: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. If you’re adding walnuts or pecans, fold them in at this stage.
- Step 5: Pour the prepared batter into your greased loaf pan. Use a spatula to spread it evenly, ensuring that the top is smooth.
- Step 6: Place the loaf pan in the preheated oven and bake for 55-65 minutes. To check for doneness, insert a toothpick into the center of the bread; it should come out clean or with a few moist crumbs.
- Step 7: Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely before slicing.
