Ingredients

For the Cheesy Baked Orzo
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Equipment

  • Medium saucepan
  • Large Mixing Bowl
  • Baking dish (9x9 or similar size)
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Colander
  • Knife and cutting board

Method

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a medium saucepan, bring 2 cups of vegetable broth to a boil. Once boiling, add 1 cup of orzo pasta. Cook according to the package instructions until al dente, usually about 8-10 minutes. After cooking, drain the orzo in a colander and set it aside.
  3. Step 3: In a large mixing bowl, combine the cooked orzo with 1 cup of milk, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, 1 cup of chopped spinach, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste. If you enjoy a little heat, add 1/2 teaspoon of red pepper flakes. Mix everything together until well combined.
  4. Step 4: Grease your baking dish with a little olive oil. Transfer the orzo mixture to the greased baking dish, spreading it evenly with a spatula.
  5. Step 5: Drizzle 1 tablespoon of olive oil over the top of the orzo and sprinkle some additional cheese on top if desired. This will create a delightful golden layer as it bakes.
  6. Step 6: Place the baking dish in the preheated oven and bake for 20-25 minutes until the top is bubbly and golden brown.
  7. Step 7: Once baked, remove the dish from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

Notes

This dish provides a good source of carbohydrates from the orzo, which are essential for energy. The addition of spinach not only boosts the vitamin content but also adds fiber, helping to keep you satisfied.
