- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a medium saucepan, bring 2 cups of vegetable broth to a boil. Once boiling, add 1 cup of orzo pasta. Cook according to the package instructions until al dente, usually about 8-10 minutes. After cooking, drain the orzo in a colander and set it aside.
- Step 3: In a large mixing bowl, combine the cooked orzo with 1 cup of milk, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, 1 cup of chopped spinach, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste. If you enjoy a little heat, add 1/2 teaspoon of red pepper flakes. Mix everything together until well combined.
- Step 4: Grease your baking dish with a little olive oil. Transfer the orzo mixture to the greased baking dish, spreading it evenly with a spatula.
- Step 5: Drizzle 1 tablespoon of olive oil over the top of the orzo and sprinkle some additional cheese on top if desired. This will create a delightful golden layer as it bakes.
- Step 6: Place the baking dish in the preheated oven and bake for 20-25 minutes until the top is bubbly and golden brown.
- Step 7: Once baked, remove the dish from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
