  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1.5 cups Gruyère cheese grated
  • 0.25 cup Parmesan cheese grated
For Garnish

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Bring a pot of salted water to a boil. Add the orzo pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 20-25 minutes until caramelized.
  4. Step 4: Add minced garlic and fresh thyme to the skillet. Cook for an additional 2 minutes and season with salt and pepper to taste.
  5. Step 5: In a large mixing bowl, combine the cooked orzo, caramelized onion mixture, vegetable broth, heavy cream, and half of the grated Gruyère cheese. Mix well.
  6. Step 6: Grease your baking dish and pour the orzo mixture into it, spreading it out evenly.
  7. Step 7: Sprinkle the remaining Gruyère cheese and the Parmesan cheese over the top.
  8. Step 8: Bake in the preheated oven for 25-30 minutes until the top is golden and bubbly.
  9. Step 9: Remove from the oven and let cool slightly. Garnish with freshly chopped parsley before serving.

Notes

This dish reheats beautifully, making it a delicious option for lunch the next day. It can also be prepared ahead of time and stored in the fridge or frozen for later.
