For the Buffalo Cauliflower Cheesy Orzo Bake
  • 1 medium head cauliflower cut into florets (about 4 cups)
  • 2 tbsp olive oil
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup buffalo sauce adjust to your desired spice level
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup green onions chopped (for garnish)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large mixing bowl, toss the cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Step 3: Roast the cauliflower in the oven for 25-30 minutes until tender and slightly browned.
  4. Step 4: In a medium pot, bring vegetable broth to a boil. Add orzo pasta and cook for about 8-10 minutes. Drain and set aside.
  5. Step 5: In a large mixing bowl, combine cooked orzo, roasted cauliflower, buffalo sauce, garlic powder, onion powder, and half of the cheddar and mozzarella cheeses. Stir until combined.
  6. Step 6: Grease a large baking dish and pour the mixture into it. Top with remaining cheddar and mozzarella cheeses.
  7. Step 7: Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.
  8. Step 8: Let cool for about 5 minutes and garnish with chopped green onions before serving.

Notes

For a spicier kick, consider adding extra buffalo sauce or some chopped jalapeños. For a creamier texture, add a splash of heavy cream or sour cream.
