- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a small bowl, combine olive oil, salt, black pepper, minced garlic, rosemary, thyme, and Dijon mustard to create your marinade.
- Step 3: Rub the marinade all over the trimmed beef tenderloin, ensuring it is evenly coated.
- Step 4: Transfer the marinated beef tenderloin to a roasting rack placed inside a baking dish.
- Step 5: Roast the beef for 25-30 minutes, checking for an internal temperature of 130°F (54°C) for medium-rare.
- Step 6: Once done, remove the beef from the oven and let it rest for 15-20 minutes before slicing.
- Step 7: Slice the tenderloin into even portions and serve garnished with additional herbs if desired.
