  • 1 pound Fresh Strawberries Select large, uniformly shaped strawberries for the best results.
  • 8 ounces Cream Cheese Softened to room temperature.
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Miniature Chocolate Chips
  • 12-15 pieces Small Pretzel Sticks
  • 1-2 drops Red Gel Food Coloring (optional) For a deeper red hue in the cream cheese.

Method
 

Instructions
  1. Wash and thoroughly dry the strawberries. Select the largest, most uniformly shaped strawberries (about 12-15) for the Santa bodies. Cut off the green tops, leaving about 1/4 inch of green stem attached.
  2. In a medium bowl, beat the softened cream cheese with an electric mixer (or whisk) until smooth and creamy. Add red gel food coloring if desired.
  3. Gradually add the powdered sugar and vanilla extract, beating until well combined and fluffy.
  4. Spoon a generous amount of the cream cheese mixture onto each strawberry, shaping it into a round Santa belly.
  5. Attach two miniature chocolate chips for eyes. Break a small pretzel stick in half; use a small piece for the Santa's mouth.
  6. For best results, refrigerate the Strawberry Santas for at least 30 minutes before serving to firm up the cream cheese. Enjoy!

Notes

These are best made fresh. Leftovers can be stored in the refrigerator for up to 2 days, but the cream cheese may soften.
