  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
For the Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar packed
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 cup unsalted butter softened

Equipment

  • Muffin tin (12-cup)
  • Mixing Bowls (large and small)
  • Whisk
  • Spatula or Wooden Spoon
  • Measuring cups and spoons
  • Rubber spatula for scraping the bowl
  • Cooling rack
  • Paper liners (optional)

Method

  1. Step 1: Preheat the oven to 350°F (175°C). Grease your muffin tin or line it with paper liners.
  2. Step 2: In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, ground ginger, ground nutmeg, and salt.
  3. Step 3: In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.
  4. Step 4: Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Step 5: In a small bowl, combine the streusel topping ingredients until crumbly.
  6. Step 6: Divide the muffin batter evenly among the muffin cups, filling each about two-thirds full. Sprinkle the streusel topping over each muffin.
  7. Step 7: Bake for 18-20 minutes, until a toothpick inserted into the center comes out clean.
  8. Step 8: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
